The location of the iPhone backup files generated in iTunes is the following directory:
Windows XP:
\Documents and Settings\USERNAME\Application Data\Apple Computer\MobileSync\Backup\
Windows Vista or Windows 7:
\Users\USERNAME\AppData\Roaming\Apple Computer\MobileSync\Backup\
Replace USERNAME with your personal account name.

This might be of use to you:

"Our iPhone Backup Extractor software can recover contacts, pictures, call histories, MMS, SMS and text messages, video, voicemail, calendar entries, notes, app files, saved games, debug information and data that might otherwise be inaccessible.
The iPhone Backup Extractor automatically converts the extracted backup databases into CSV, VCard or ICAL formats, so they can be easily imported into Excel, Outlook, or Webmail. It can convert consolidated location data into a KML file for use with Google Earth."

Your SMS are backed up and buried deep within the standard iPhone backup location located at: ~/Library/Application Support/MobileSync/Backup/
Everything else is the same as above, look for the same files and you’ll need to open them in a SQLite editor. And then copy those SMS to computer from your iPhone, so that you can get back reading in you computer.

Use iBackup Extractor. It will extract SMS from your iPhone backup files and lets you save them in a .html format. It will even take images out of your MMS and save them as JPEGs.
